Coconut-Curry Sauce

This is a recipe for a sauce that I’ve been making for the past ten years, my famous Coconut-curry sauce. I started doing this recipe mainly to have something other than olive oil to put on my pasta. But over time, it became quite the specialty. And most of the time, I admit, when I invite friends over to eat, I serve them this sauce with either rice or pasta. It’s good either way. Writing this, I realize that I haven’t made it in a long time for my friends, maybe next time!

Because it’s a recipe I always make from scratch, I don’t really have the correct measurement of ingredients. I know how it’s supposed to taste like, so I mix everything until everything’s perfect. But, I will try to make it as clear as possible for you to be able to make it at home for your friends and family. Just remember, as with most recipe, if something doesn’t taste right for you, it doesn’t necessarily mean you did it wrong. And if you want to add more salt, sugar, or whatever, just do it.

Without further explanations about my life and how to bake, here’s the recipe for my famous Coconut-Curry sauce!


Coconut-Curry Sauce

  • 1/2 onion
  • oil (whichever you prefer to cook with)
  • 500 ml coconut milk
  • 3 tablespoons curry powder
  • 1 teaspoon red curry paste
  • salt
  • pepper
  • 1 pinch curcuma
  • 1 teaspoon cumin


  • First, chop your half onion in small dices.
  • Add them to a pan with oil and a pinch of salt.
  • When the onions are golden add the coconut milk and wait until it starts to heat.
  • Then add the spices: curry, curcuma and red curry paste.
  • Mix the two and then taste it. Add salt and pepper to taste.

And that’s it! It’s a super easy and quick recipe that you can make any weeknights when you don’t dare to cook a lengthy meal.

To go a bit further

I usually serve the sauce with pasta if I’m not that hungry. But you can also mix it in with any kind of rice. And if you want to make a full meal, you can add potatoes or chicken into the sauce while cooking it. They should absorb the curry and coconut flavors of the sauce really well and make it a whole meal!

Of course, as I said before, any recipe should be adapted to your taste. My sauce isn’t spicy, and if you want something with a bit more spices in it. Feel free to add chili flakes or more curry paste. In the end, respecting the recipe isn’t what matters; making something you’ll like is what’s important!
